Ingredients
- 8 tbsp vegetable shortening
- 1/2 cup whole almonds
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1 1/3 cups sugar
- 2 large eggs
- 1/2 cup soy milk
- 2 tbsp lemon extract
- zest and juice of 2 meyer lemons
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with shortening.
- Grind the almonds finely and whisk them with the flour, baking powder, and salt.
- Beat the remaining shortening and sugar until smooth, then beat in the eggs one at a time.
- Mix in the soy milk, lemon extract, lemon zest, and lemon juice, then fold in the dry mixture.
- Spread the batter in the pan and bake for 55 minutes, until a toothpick comes out clean.
- Cool the cake in the pan for 15 minutes, then cool it completely before slicing.
