- 1/3 cup chopped cilantro
- 1/4 cup minced green onion
- 1/2 cup olive oil
- 1/4 cup lime juice
- 2 tbsp honey (optional)
- 1 tsp minced garlic
- 1 tsp ground cumin
- 1/2 tsp oregano
- 1/4 tsp chili powder
- salt and pepper (optional)
Steps
- Place the coleslaw mix, cilantro, and green onion in a large bowl.
- Whisk the olive oil, lime juice, honey, garlic, cumin, oregano, and chili powder in a small bowl.
- Season the dressing with salt and pepper, if using.
- Pour the dressing over the vegetables and toss until evenly coated.
- Let the slaw stand for 5 minutes before tossing once more.
