Ingredients
- 12 oz spaghetti
- 2 cans albacore tuna
- 1/4 cup extra-virgin olive oil
- 1 tbsp plus 1 teaspoon lemon zest
- 2 tbsp lemon juice
- 1/2 tsp kosher salt
- 1/4 tsp red pepper flakes
- 3 tbsp capers
- 3 tightly packed cups arugula
- 1/4 cup flat-leaf parsley (optional)
- freshly ground black pepper (optional)
Steps
- Boil the spaghetti in salted water until tender, about 10 minutes.
- Whisk the olive oil, lemon zest, lemon juice, salt, red pepper flakes, and black pepper in a large bowl.
- Drain the spaghetti, reserving 1/4 cup cooking water.
- Toss the spaghetti with the lemon mixture, tuna, capers, and enough cooking water to coat.
- Fold in the arugula and parsley, then serve.
