12 oz small button mushrooms
1 tsp extra virgin olive oil
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
2 cloves garlic
1/2 tsp maple syrup or sugar if desired
1/2 tsp red pepper flakes
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp dried thyme
3/8 tsp sea salt
2 tbsp fresh chopped parsley

Steps

Cook the mushrooms with 1 teaspoon olive oil in a large skillet over medium-high heat for 4 minutes.
Whisk the red wine vinegar, remaining olive oil, garlic, maple syrup, red pepper flakes, basil, oregano, thyme, and salt in a bowl.
Transfer the hot mushrooms to the bowl and toss with the marinade.
Let the mushrooms stand for 5 minutes, then stir in the parsley.
