Ingredients
- 3 cups fresh blueberries
- 2 mangos
- 1/2 tbsp flour
- 1 tsp pure vanilla extract
- 1 tbsp light brown sugar
- 3/4 cup rolled oats
- 1/3 cup plain flour
- 2 tbsp shredded coconut (optional)
- 2 tbsp honey
- 3 tbsp reduced fat butter
- 1 tbsp light brown sugar
- 1 pinch salt
Steps
- Heat the oven to 375 F and lightly grease an 8-inch baking dish with oil.
- Toss the blueberries and chopped mango with the half tablespoon flour, vanilla, and one tablespoon brown sugar in the dish.
- Stir the oats, plain flour, coconut, honey, melted butter, remaining brown sugar, and salt in a bowl.
- Scatter the topping over the fruit.
- Bake the crumble for 30 minutes, until the fruit bubbles and the topping is golden.
- Cool the crumble for 10 minutes before serving.
