Ingredients
- 1/2 cup dry beluga lentils/caviar black lentils
- 3/4 cup water
- 1/3 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp cumin powder
- 1/2 tsp dry thyme
- 1 1/2 chipotle chili in adobo sauce
- 1/2 cup corn
- 3 1/2 sweet potatoes
- guacamole (optional)
Steps
- Heat the oven to 425 F and pierce the sweet potatoes several times with a fork.
- Bake the sweet potatoes on a baking sheet for 45 minutes, until tender.
- Simmer the lentils, water, salt, garlic powder, cumin, thyme, and chipotle in a small saucepan for 20 minutes.
- Stir the corn into the lentils and cook for 3 minutes.
- Split the baked sweet potatoes, fill them with the lentil mixture, and top with guacamole if desired.
