Ingredients
- 1 egg
- 1 cup flour
- 3 tbsp sugar
- 1 lemon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 2 tbsp butter
- 1/4 cup blackberry jam
- 3/4 cup powdered sugar
- 1 tbsp honey
- 2 tbsp water
Steps
- Stir blackberry jam, powdered sugar, honey, water, and 1 tablespoon lemon juice in a small saucepan over medium heat for 5 minutes.
- Whisk flour, sugar, baking powder, baking soda, salt, buttermilk, egg, lemon zest, and the remaining lemon juice in a bowl.
- Melt butter in a large nonstick skillet over medium heat, then cook 1/4-cup portions for 2 minutes per side.
- Warm the syrup for 1 minute, then spoon it over the cooked pancakes.
