Ingredients
- 3/4 cup sugar
- 1 lemon - juice and zest
- 1/2 cup butter
- 2 eggs
- 1/2 cup honey
- 1/2 cup almond breeze original almondmilk or vanilla almondmilk
- 1 tsp vanilla
- 1 1/2 cups flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 cup powdered sugar
- 1 tbsp almond breeze original almondmilk or vanilla almondmilk
Steps
- Heat the oven to 350 F and line a 12-cup muffin pan.
- Melt the butter, then whisk it with the sugar, lemon zest, lemon juice, eggs, honey, almond milk, and vanilla.
- Whisk the flour, salt, baking powder, and baking soda in a separate bowl.
- Stir the dry mixture into the wet mixture just until combined.
- Divide the batter among the muffin cups and bake for 18 to 20 minutes until set.
- Cool the muffins in the pan for 5 minutes, then move them to a rack.
- Whisk the powdered sugar with one tablespoon almond milk and drizzle it over the cooled muffins.
