Lemon Glazed Easter Cakes

These lemon cakes combine boxed cake mix and pudding, then finish with a bright powdered sugar glaze.

Ingredients

  • 1 box (15 1/4 oz) lemon supreme cake
  • 1 box (5 7/8 oz) jell-o instant lemon pudding and pie filling mix
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 cup water
  • 1 cup confectioners' sugar
  • 1 1/2 fresh lemon juice
  • 1 lemon
  • milk as needed to thin glaze (optional)

Steps

  1. Heat the oven to 350 F and lightly oil a 9-by-13-inch baking pan.
  2. Beat the cake mix, pudding mix, vegetable oil, eggs, and water in a large bowl until smooth.
  3. Spread the batter in the pan and bake for 35 to 40 minutes, until the center springs back.
  4. Cool the cake in the pan for 10 minutes.
  5. Whisk the confectioners' sugar with the lemon juice, adding a little milk if needed, and drizzle the glaze over the warm cake.
