Ingredients
- 100 g unsalted butter
- 125 g icing sugar
- 25 g flour
- 85 g almonds
- 3 egg white
- 1 unwaxed lemon
- 85 g blackberries
Steps
- Heat the oven to 375 F and grease a 12-cup muffin pan with butter.
- Melt the butter and let it cool slightly.
- Whisk the icing sugar, flour, and almonds in a bowl.
- Whisk in the egg whites, lemon zest, and melted butter until smooth.
- Divide the batter among the cups and press the blackberries into the batter.
- Bake for 18 to 22 minutes until golden and set in the centers.
- Cool the friands in the pan for 10 minutes before removing them.
