Ingredients
- 6 cups homemade turkey stock
- 1 bay leaf
- 1 cup diced carrot
- 3/4 cup chopped onion
- 3/4 cup diced celery
- 2 cloves garlic
- salt to taste (optional)
- freshly ground black pepper
- 1/4 cup chopped parsley
- 3 oz uncooked egg noodles
- 2 cups leftover shredded turkey
Steps
- Bring the turkey stock, bay leaf, carrot, onion, celery, and garlic to a boil in a large pot.
- Simmer the vegetables for 3 minutes, then season with salt and pepper.
- Add the egg noodles and cook for 5 minutes, stirring once.
- Stir in the shredded turkey and parsley, then cook for 2 minutes until the soup reaches 165 F.
- Remove the bay leaf and serve the soup hot.
