Ingredients
- 6 oz pork belly or shoulder
- 1 tsp grated ginger
- 1 tbsp minced garlic
- 1/2 cup juice from kimchi
- 1 1/2 tsp gochugaru
- 1 or 2 scallions
Steps
- Cut the pork into 1-inch pieces and grate or mince the ginger, garlic, and scallions.
- Heat cooking oil in a 5-quart Dutch oven over medium-high heat, then brown the pork for 5 minutes.
- Add the kimchi, kimchi juice, water, gochugaru, and sugar, and bring the mixture to a boil.
- Cover the pot, reduce the heat to low, and simmer for 35 minutes until the pork reaches 145 F.
- Uncover and simmer for 5 minutes, then scatter the scallions over the pork.
