Ingredients
- 1 cup butter
- 1/2 cup confectioners' sugar
- 1 tbsp grated lime zest
- 1/2 tsp vanilla extract
- 7/8 cups all-purpose flour
- 1/4 cup cornstarch

- 4 tsp key lime or regular lime juice
- 1 tsp grated lime zest
Steps
- Heat the oven to 350 F and line a baking sheet with enough cooking oil to prevent sticking.
- Beat the butter, one-half cup confectioners' sugar, lime zest, and vanilla until smooth.
- Mix in the flour and cornstarch, chill the dough for 5 minutes, and shape it into small balls.
- Roll the dough balls in sugar, place them on the baking sheet, and bake for 12 minutes.
- Cool the cookies for 10 minutes, then whisk the remaining confectioners' sugar, lime juice, and lime zest into a glaze.
- Drizzle the glaze over the cooled cookies and let it set for 3 minutes.
