Ingredients
- 6 cups packed stemmed and roughly chopped italian kale
- 1/3 cup fresh lemon juice
- 1 1/4 cup freshly grated parmesan cheese
- 3/4 cup extra-virgin olive oil
- 3 cloves garlic
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- 3/4 cup panko breadcrumbs
- 2 cups loosely packed flat-leaf parsley leaves
Steps
- Whisk the lemon juice, olive oil, garlic, salt, and black pepper in a large bowl.
- Add the kale and massage it with the dressing for 3 to 4 minutes, until softened.
- Stir in 1 cup of the Parmesan and let the kale stand for 10 minutes.
- Fold in the parsley and panko breadcrumbs.
- Scatter the remaining Parmesan over the salad and toss gently before serving.
