Ingredients
- 8 bone-in chicken legs
- 1 tbsp dark soy sauce
- 3 tbsp regular soy sauce
- 1/2 tbsp dark soy sauce
- 4 cloves garlic
- 3 star anise
- 1/2 tsp sichuan pepper
- 3/4 cup cold water
- 1 cup jasmine rice
- 1 cup cold water
Steps
- Rinse the jasmine rice and place it in the Instant Pot with 1 cup cold water.
- Add the chicken legs, remaining water, garlic, star anise, Sichuan pepper, regular soy sauce, and both portions of dark soy sauce.
- Secure the lid and cook at high pressure for 12 minutes.
- Let the pressure release naturally for 10 minutes, then release any remaining pressure.
- Check that the chicken reaches 165 F and the rice is tender before removing the star anise.
