Ingredients
- 6 chicken drumsticks
- 1 tbsp oil
- green onions (optional)
- 1/4 cup filipino soy sauce
- 1/2 cup regular soy sauce
- 1/4 cup filipino vinegar
- 1 tbsp fish sauce
- 1 tbsp sugar
- 10 cloves garlic
- 1 small onion
- 1 tsp ground black peppercorn
- 1 dried red chili
- 4 dried bay leaves
- 1 tsp cornstarch
- 1 tbsp water
Steps
- Set a pressure cooker to sauté, heat the oil, and brown the drumsticks in batches.
- Add the onion and garlic, then cook for 2 minutes.
- Add both soy sauces, vinegar, fish sauce, sugar, pepper, chili, and bay leaves.
- Seal the cooker and pressure-cook on high for 10 minutes, then release pressure naturally for 10 minutes.
- Stir the cornstarch and water together, remove the chicken, and set the cooker to sauté.
- Stir in the slurry and simmer for 3 to 5 minutes, then return chicken that reaches 165 F to the sauce.
