  • 2 lb pork belly or pork side ribs
  • 1 tbsp peanut oil or olive oil
  • 1 onion
  • 12 cloves garlic
  • 1 tbsp ginger
  • 1 tbsp brown sugar
  • 1 tsp whole black peppercorn
  • 1 dried red chili
  • 4 dried bay leaves
  • 1/4 cup filipino soy sauce
  • 1/3 cup regular soy sauce
  • 1/3 cup filipino vinegar
  • 1 tbsp fish sauce
  • 2 1/2 tbsp cornstarch
  • 3 tbsp cold water
  • green onions (optional)

Steps

  1. Cut the pork into 2-inch pieces and season lightly with salt and pepper.
  2. Set a 6-quart pressure cooker to Sauté, heat the oil, and brown the pork for 8 minutes.
  3. Add the onion, garlic, ginger, sugar, peppercorns, chili, bay leaves, both soy sauces, vinegar, fish sauce, and 1 cup water.
  4. Seal the cooker and cook at high pressure for 20 minutes, until the pork reaches 145 F.
  5. Let the pressure release naturally for 10 minutes, then remove the bay leaves.
