Hummingbird Bundt Cake

Ingredients

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 1 tsp dried ground cinnamon
  • 1/2 tsp salt
  • 3 large eggs
  • 1 3/4 cup mashed bananas
  • 1 cup coconut
  • 8 oz can crushed pineapple
  • 3/4 cup vegetable oil
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups pecans
  • 4 oz cream cheese
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 tbsp whole milk

Steps

  1. Heat the oven to 350 F and oil a 10-inch Bundt pan.
  2. Whisk the flour, sugar, baking soda, cinnamon, and salt in a large bowl.
  3. Stir in the eggs, bananas, coconut, pineapple, oil, vanilla, and pecans until combined.
  4. Pour the batter into the pan and bake for 50 to 55 minutes, until firm and a tester comes out clean.
  5. Beat the cream cheese, powdered sugar, vanilla, and milk until smooth, then spread the glaze over the cooled cake.
