Ingredients
- 12 small corn tortillas
- 1 jar (15 oz) salsa verde
- 2 cups shredded mexican blend cheese
- 1 can (15 oz) black beans
- 6 large eggs
- pico de gallo
Steps
- Heat the oven to 375 F and lightly oil a 9-by-13-inch baking dish.
- Layer half the tortillas, salsa verde, black beans, and cheese in the dish.
- Repeat the layers with the remaining tortillas, salsa verde, beans, and cheese.
- Make six wells in the surface and crack an egg into each one.
- Bake for 30 minutes, until the eggs are firm and the casserole is hot.
- Top with pico de gallo and rest for 5 minutes before cutting.
