- 4 large eggs
- 1 cup pure maple syrup
- 1/2 cup tahini
- 1/2 cup melted and cooled coconut oil
- 1 tbsp vanilla extract
- 2 tsp almond extract
- 2 cups packed super fine blanched almond flour
- 1/2 cup coconut flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup sprinkles
- 1 cup salted butter
- 2 3/4 cups powdered sugar
- 2 tsp pure vanilla extract
- optional: 2 teaspoons unsweetened vanilla almond milk
- 1/3 cup sprinkles
Steps
- Heat the oven to 350 F and grease a 9-by-13-inch baking pan.
- Whisk the eggs, maple syrup, tahini, cooled coconut oil, vanilla, and almond extract in a large bowl.
- Stir in the almond flour, coconut flour, baking soda, and salt, then fold in 1/2 cup sprinkles.
- Spread the batter in the pan and bake for 25 to 30 minutes, until the center springs back.
- Cool the cake for 10 minutes, then beat the butter, powdered sugar, and vanilla until smooth.
- Spread the frosting over the cake and decorate with the remaining sprinkles.
