- 4 tbsp extra-virgin olive oil
- 2 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 2 romaine hearts
- 2 avocados
- 1 red onion
- 1 cup cherry tomatoes
- 1 cup blue cheese dressing
- 4 oz blue cheese
- minced fresh chives (optional)
Steps
- Heat a grill to medium-high heat, about 400 F.
- Brush the steak with olive oil and season it with salt and pepper.
- Grill the steak for 5 to 7 minutes per side, until it reaches 145 F, then rest it for 5 minutes.
- Chop the romaine, avocado, red onion, and cherry tomatoes, then arrange them in a large bowl.
- Slice the rested steak and place it over the salad.
- Drizzle with blue cheese dressing and sprinkle with blue cheese and chives.
