Ingredients

2 lb red potatoes
1 lb fresh green beans
1 small red onion
1/4 cup chopped fresh mint (optional)
1/2 cup canola oil
1/4 cup white vinegar
2 tbsp lemon juice
1 tsp salt
1/2 tsp garlic powder
1/4 tsp pepper

Steps

Cut the potatoes into bite-size pieces, place them in a large pot, cover with water, and boil for 15 minutes until tender.
Add the green beans during the last 5 minutes, then drain both vegetables and cool them for 5 minutes.
Whisk the canola oil, vinegar, lemon juice, salt, garlic powder, and pepper in a large bowl.
