Ingredients
- 3 overripe bananas
- 1/2 cup plain greek yogurt
- 1 large egg
- 1 tsp vanilla extract
- 5 tbsp coconut oil
- 1/2 cup granulated sugar
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon powder
- 1 1/3 cups gluten-free flour
- 1/2 cup chocolate chips
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with some coconut oil.
- Whisk the bananas, yogurt, egg, vanilla, melted coconut oil, and sugar in a large bowl.
- Stir the gluten-free flour, baking soda, salt, and cinnamon into the banana mixture until just combined.
- Fold in the chocolate chips and spread the batter in the prepared pan.
- Bake for 50 to 55 minutes, until the center is set and a toothpick comes out clean.
- Cool the loaf in the pan for 15 minutes before slicing.
