Ingredients
- 1 lb bucatini
- 3 tbsp kosher salt
- 3 large eggs
- 1 cup freshly grated parmesan cheese
- 2 tbsp chili crisp
- 1/2 tsp freshly ground black pepper
- 2 tbsp extra virgin olive oil
- 4 slices pancetta or bacon
- 1 yellow onion
Steps
- Boil the bucatini in a large pot with the kosher salt for 9 to 11 minutes, then drain.
- Heat the olive oil in a large skillet over medium heat for 1 minute.
- Cook the chopped pancetta and onion for 7 minutes, stirring often.
- Whisk the eggs, Parmesan, chili crisp, and black pepper in a bowl for 1 minute.
- Add the hot bucatini to the skillet and toss for 1 minute.
- Remove the skillet from the heat, add the egg mixture, and stir over low heat for 3 minutes until firm.
