Ingredients
- 1 1/2 cups chicken broth
- 1 cup couscous
- 5 1/2 cups coleslaw mix
- 1 1/2 cans (10 oz) mandarin oranges
- 1 1/2 cups chicken breast
- 1 batch of homemade ginger sesame citrus salad dressing
Steps
- Bring the chicken broth to a boil in a small saucepan.
- Stir in the couscous, cover the pan, and let it stand for 5 minutes.
- Fluff the couscous with a fork and cool it for 5 minutes.
- Combine the couscous, coleslaw mix, mandarin oranges, and chicken in a large bowl.
- Check that the thickest part of the poultry reaches 165 F before serving.
- Pour in the ginger sesame citrus dressing, toss well, and chill for 10 minutes before serving.
