Ingredients
- 1 head napa cabbage
- 1 bunch green onions
- 4 cups shredded rotisserie chicken
- 1 cup cashews
- 1 cup something crunchy - fried wonton strips
- 1 tbsp sesame seeds (optional)
- 1/2 cup + 2 tablespoons vegetable oil or avocado oil
- 1/2 cup maple syrup or granulated sugar
- 3 tbsp apple cider vinegar
- 2 tbsp soy sauce
- 2 tbsp sesame oil (optional)
- salt to taste (optional)
Steps
- Whisk the oil, maple syrup, vinegar, soy sauce, sesame oil, sesame seeds, salt, and pepper in a small bowl.
- Thinly slice the napa cabbage and green onions.
- Combine the cabbage, green onions, chicken, cashews, and crunchy strips in a large bowl.
- Check that the thickest part of the poultry reaches 165 F before serving.
- Pour the dressing over the salad and toss for 2 minutes before serving.
