Ingredients
- 2 1/2 lb yukon gold potatoes
- salt and freshly ground black pepper
- 6 tbsp butter
- 4 cloves garlic
- 3 1/2 tbsp half and half
- 1/2 cup finely shredded parmesan cheese
- 4 large egg yolks
- minced fresh parsley (optional)
- finely grated parmesan (optional)
Steps
- Heat the oven to 425 F and line a baking sheet.
- Peel and cube the potatoes, then boil them in salted water for 15 to 20 minutes until tender.
- Melt the butter in a small pan, add the garlic, and cook for 1 minute.
- Drain and mash the potatoes, then mix in the garlic butter, half and half, Parmesan, egg yolks, salt, and pepper.
- Pipe or spoon the potato mixture into mounds on the baking sheet.
- Bake for 20 to 25 minutes until golden and the centers are firm, then garnish with parsley or Parmesan if using.
