Ingredients
- 2 3/4 kg / 5-6 lb single turkey breast
- 1/2 tsp salt
- black pepper
- small bunch of fresh herbs - 4 rosemary sprigs
- 12 cloves garlic
- 150 g / 5 oz unsalted butter
- 1 1/4 tsp table salt or 1 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 4 large garlic cloves
- 1 tbsp finely chopped sage
- 1 tbsp finely chopped rosemary
- 1 tbsp fresh thyme leaves
- 1 tbsp finely chopped parsley leaves
Steps
- Heat the oven to 350 F and place the turkey breast in a roasting pan.
- Mash the butter with the table salt, black pepper, four minced garlic cloves, sage, rosemary, thyme, and parsley.
- Rub the herb butter over the turkey breast and place the remaining garlic and rosemary around it.
- Roast for 85 to 95 minutes, basting once, until the thickest part reaches 165 F.
- Rest the turkey loosely covered for 15 minutes before slicing.
