1 tbsp extra-virgin olive oil
2 tbsp butter
2 cloves garlic
3 large zucchini
1/2 tsp italian seasonings
1 pinch crushed red pepper flakes
kosher salt and freshly ground black pepper to taste (optional)
chopped fresh parsley for garnish (optional)

Steps

Cut the zucchini into half-moon slices and mince the garlic.
Heat the olive oil and butter in a large skillet over medium heat.
Add the zucchini and cook for 6 to 8 minutes, stirring often, until tender.
Stir in the garlic, Italian seasoning, and red pepper flakes, then cook for 1 minute.
Season with salt and black pepper, and scatter parsley over the zucchini if using.
