Ingredients
- 1 pie crust
- 1 cup granulated sugar
- 1/4 cup packed light-brown sugar
- 1/4 tsp salt
- 3 large eggs
- 6 oz bittersweet chocolate chips
- 1 1/2 tsp vanilla extract
- 8 tbsp unsalted butter
- 1 1/4 cups heavy cream
- 3 tbsp unsweetened cocoa powder
- 2 1/2 cups heavy cream
- 5 tbsp granulated sugar
- 2 1/2 oz dark chocolate
Steps
- Heat the oven to 375 F and bake the pie crust for 12 minutes, then cool it for 10 minutes.
- Whisk the granulated sugar, brown sugar, salt, and eggs in a heatproof bowl over simmering water until thick and 160 F.
- Stir in the chocolate chips, butter, and vanilla until smooth, then spread the filling in the cooled crust.
- Chill the pie for 13 minutes while whipping 2 1/2 cups cream with 5 tablespoons sugar and the cocoa.
- Spread the cocoa cream over the pie and shave the dark chocolate over the top.
