Ingredients
- 2 tsp extra-virgin olive oil
- 1 large shallot
- 3 cloves garlic
- 1 can (28 oz) whole peeled tomatoes
- 1/2 cup water or low-sodium broth
- 1/2 tsp fine sea salt
- 1/4 tsp red chili flakes (optional)
- 12 oz fregola sarda pasta
- 1/3 cup grated pecorino romano or parmesan cheese
- 10 fresh basil leaves
- 1 lemon
Steps
- Heat the olive oil in a large pot over medium heat, then cook the chopped shallot for 3 minutes.
- Add the garlic and chili flakes, if using, and cook for 1 minute.
- Stir in the tomatoes, water, and salt, then simmer for 8 minutes.
- Add the fregola, cover the pot, and simmer for 18 minutes, stirring often until tender.
- Stir in the pecorino, chopped basil, and lemon juice, then serve hot.
