Ingredients
- 12 tbsp unsalted butter (optional)
- 6 oz semi-sweet chocolate
- 1 1/4 cups sugar
- 5 large eggs
- 4 large egg whites
- 1/8 tsp cream of tartar
- 3/4 cup sugar
Steps
- Heat the oven to 350 F and lightly oil a 9-inch round cake pan.
- Melt the butter and chocolate together in a saucepan over low heat, then stir until smooth.
- Whisk in 1 1/4 cups sugar, the whole eggs, and cocoa powder until combined.
- Spread the batter in the pan and bake for 25 to 30 minutes, until the center reaches 160 F.
- Beat the egg whites and cream of tartar until soft peaks form, then add 3/4 cup sugar and beat until glossy.
- Spread the meringue over the warm cake and bake at 350 F for 12 to 15 minutes, until browned and set.
- Cool the cake in the pan for 10 minutes before slicing.
