Ingredients
- 1 cup cashews
- 3/4 cup water
- 1/2 tsp salt
- 1 clove garlic
- 1 tbsp oil
- 4 large sweet potatoes
- 2 cups baby spinach
- 1 handful fresh basil leaves
- salt and pepper to taste (optional)
- olive oil for drizzling (optional)
Steps
- Blend the cashews, water, salt, and garlic until smooth.
- Peel the sweet potatoes and cut them into noodles with a spiralizer.
- Heat the oil in a large skillet over medium heat.
- Cook the sweet potato noodles for 7 to 9 minutes, stirring often, until tender.
- Add the spinach and basil and cook for 2 minutes, until the spinach wilts.
- Stir in the cashew sauce and warm for 1 to 2 minutes, adding pepper if desired.
