Ingredients
- 1 lb short pasta
- 1 large lemon
- 1/2 cup butter
- 4 cloves garlic
- 1/2 tsp crushed red pepper
- 2 cups heavy cream
- 1 cup reserved pasta water
- 3/4 cup grated parmesan
- salt and pepper to taste (optional)
- chopped parsley for garnish (optional)
Steps
- Boil salted water in a large pot, cook the pasta until tender, and reserve 1 cup water before draining.
- Melt the butter in a large skillet over medium heat, then cook the garlic and red pepper for 1 minute.
- Add the cream and simmer gently for 5 minutes.
- Stir in the lemon zest, lemon juice, and reserved pasta water, then simmer for 3 minutes.
- Toss the drained pasta and Parmesan in the skillet until coated, seasoning with salt and pepper.
