Ingredients
- 9 dried lasagne sheets
- 1 tbsp sunflower oil
- 1 onion finely chopped
- 700 g courgette
- 2 cloves garlic crushed
- 250 g tub ricotta
- 50 g cheddar
- 350 g jar tomato sauce for pasta
Steps
- Heat the oven to 350 F and boil the lasagne sheets in salted water for 5 minutes.
- Heat the sunflower oil in a large skillet and cook the onion, courgette, and garlic for 8 minutes.
- Stir the ricotta into the courgette mixture.
- Spread some tomato sauce in a 9-by-13-inch baking dish, then layer pasta, courgette mixture, and sauce three times.
- Top the lasagne with the cheddar and bake for 15 minutes until bubbling.
- Rest the lasagne for 2 minutes before cutting.
