Ingredients
- 10 tbsp olive oil
- 3 sized courgettes very thinly sliced
- 3 cloves garlic peeled
- 2 x 400g cans of butter beans
- 1 lemon juiced
- 100 g parmesan grated
- 30 g basil roughly chopped
- 20 g pistachios roughly chopped
- sliced sourdough to serve (optional)
Steps
- Blend the basil, pistachios, garlic, lemon juice, and 4 tablespoons olive oil into a coarse pesto.
- Heat 3 tablespoons olive oil in a large skillet over medium heat and cook the courgettes for 8 minutes.
- Stir in the drained butter beans and 2 tablespoons water, then cook for 5 minutes.
- Add the parmesan and stir for 3 minutes until melted and creamy.
- Spoon the pesto and remaining olive oil over the beans and courgettes before serving.
