- 6 cups chicken broth
- 2 tbsp olive oil
- 1 shallot
- 2 cups broccoli
- 1/2 cup butter
- 3 tbsp flour
- 1 cup cream
- 1 cup half-and-half
- 1 cup cooked chicken breast
- salt
- pepper
- parmesan cheese
Steps
- Chop the shallot and broccoli into small pieces.
- Heat the olive oil in a large pot over medium heat and cook the shallot for 10 minutes.
- Add the broccoli and chicken broth, then simmer for 45 minutes.
- Melt the butter in a saucepan, whisk in the flour, and cook for 5 minutes.
- Whisk the cream and half-and-half into the flour mixture, then stir it into the soup.
- Add the cooked chicken, salt, pepper, and Parmesan, and heat until the soup reaches 165 F.
