Ingredients
- 1 head cauliflower
- 1 cup packed roasted pumpkin
- 4 oz mascarpone
- 2 tbsp maple sugar
- 1 tsp vanilla bean paste
- 2 tbsp almond/coconut milk
- 1/2 tsp cinnamon
- 1 pinch kosher salt
- 1/3 cup udi's vanilla granola
- 2 tbsp chopped pecans
Steps
- Heat the oven to 375 F and line a small baking dish with cooking oil.
- Cut the cauliflower into florets, steam or boil it for 12 to 15 minutes until tender, and drain well.
- Mash the cauliflower with the pumpkin, mascarpone, maple sugar, vanilla, milk, cinnamon, and salt.
- Spread the mash in the baking dish and sprinkle the granola and pecans over it.
- Bake for 12 to 15 minutes until hot and lightly browned.
