Ingredients
- 7/8 cup all purpose flour (optional)
- 3/4 tsp baking powder
- 1 pinch salt
- 3/4 cup whole unsalted shelled pistachios
- 1/3 cup craisins
- 2 tbsp unsalted butter
- 3/4 cup superfine sugar
- 2 large eggs
- 1 tsp vanilla extract
Steps
- Heat the oven to 350 F and line a baking sheet with parchment.
- Beat the butter and superfine sugar in a bowl until blended, then beat in the eggs and vanilla.
- Stir in the flour, baking powder, salt, pistachios, and dried cranberries until a thick dough forms.
- Shape the dough into a 3-by-10-inch log on the baking sheet.
- Bake for 20 minutes, then cool the log for 5 minutes.
- Slice the log into 24 pieces and lay them cut side down on the baking sheet.
- Bake for 8 to 10 minutes, turning once, until the biscotti are dry and firm.
