- 4 1/2 roma tomatoes
- 2 1/2 diced avocados
- 4 green onions

- 1/2 bunch cilantro
- juice of 1-2 limes
- ground pepper and kosher salt to taste (optional)
Steps
- Drain and rinse the black-eyed peas, black beans, and corn.
- Dice the tomatoes and avocados, then slice the green onions and chop the cilantro.
- Combine the beans, corn, tomatoes, avocados, green onions, and cilantro in a large bowl.
- Stir in the Italian dressing and lime juice.
- Season with salt and pepper, then chill for 5 minutes.
