Ingredients
- 2 tbsp butter
- 1 tbsp vegetable oil
- 1 onion
- 2 jalapeños (optional)
- 6 yukon gold potatoes
- 2 cups corn kernels
- 4 cups chicken stock
- 2 tsp salt
- 1/2 tsp freshly ground black pepper
- 1/2 cup half-and-half or whole milk
- chopped cilantro for garnish (optional)
Steps
- Melt the butter with the oil in a 5-quart pot over medium heat.
- Cook the chopped onion and jalapeños for 5 minutes, stirring often.
- Add the potatoes, corn, stock, salt, and pepper, then bring the soup to a boil.
- Reduce the heat and simmer for 20 minutes, until the potatoes are tender.
- Stir in the half-and-half and cook for 3 minutes without boiling.
- Taste and adjust the salt and pepper.
