- 3 cups fresh corn
- 1 shallot
- 1 clove garlic
- 1/2 cup light sour cream or plain greek yogurt
- 4 oz 1/3-fat cream cheese
- 1 cup grated cotija cheese (optional)
- 1/4 tsp each sea salt and ground black pepper
