Ingredients

  • 4 large eggs
  • 1 can (13 1/2 oz) full-fat coconut milk
  • 1 vanilla bean
  • 3 tsp ground cinnamon
  • 1 1/4 tsp ground nutmeg
  • 8 tbsp salted butter
  • 2 loaves french bread
  • 1 cup maple syrup
  • 2 granny smith apples
  • 1/2 cup pecan halves

Steps

  1. Heat the oven to 350°F and grease two 9-by-13-inch baking pans with butter.
  2. Whisk the eggs, coconut milk, scraped vanilla bean, cinnamon, and nutmeg in a large bowl.
  3. Slice the French bread, arrange it in the pans, pour the coconut mixture over it, and soak for 10 minutes.
  4. Slice the apples and scatter them with the pecans over the bread, then dot everything with the remaining butter.
  5. Bake for 35 to 40 minutes, until the bread is set and lightly browned.
  6. Drizzle maple syrup over the baked French toast before serving.
