6 tbsp golden rum
40 ladyfingers
6 egg yolks
3/4 cup granulated sugar
16 oz mascarpone
2 cups heavy whipping cream
2 1/2 tbsp unsweetened cocoa powder

Steps

Whisk the egg yolks and sugar in a heatproof bowl over simmering water until thick and fully firm, about 10 minutes.
Cool the yolk mixture for 15 minutes, then beat in the mascarpone.
Whip the heavy cream until stiff peaks form, then fold it into the mascarpone mixture.
Combine the espresso and rum in a shallow dish, then briefly dip each ladyfinger.
Layer the ladyfingers and cream in a 9-by-13-inch dish, finishing with cream.
Dust the cocoa over the top and chill for 8 hours.
