Ingredients
- 3 cups uncooked medium shell pasta
- 1 lb bay salad shrimp
- 2 ribs celery
- 3 green onions
- 9 sweet pickles
- 3 hard-boiled eggs
- 1 cup mayonnaise
- 7 tbsp pickle juice
- kosher salt and freshly ground black pepper (optional)
Steps
- Boil salted water in a large pot and cook the pasta for 8 to 10 minutes, until tender.
- Drain the pasta and rinse it with cold water.
- Chop the celery, green onions, pickles, and hard-boiled eggs into small pieces.
- Whisk the mayonnaise and pickle juice in a large bowl.
- Stir the pasta, shrimp, vegetables, pickles, and eggs into the dressing.
- Season with salt and pepper, then chill the salad for 50 minutes.
