Ingredients
- 3/4 cup all-purpose flour
- 6 tbsp unsalted butter
- 1 tsp sugar
- 1/4 tsp salt
- 3 large eggs
- egg wash (optional)
- 1 egg
- 1 tsp water
- 1 tbsp granulated sugar
- 2 tsp ground cinnamon
- 2 tbsp honey
- 1 1/2 cups heavy whipping cream
- 1 pinch salt
- 1/3 cup powdered sugar
Steps
- Heat the oven to 400 F and line a baking sheet with parchment.
- Boil 3/4 cup water, butter, sugar, and salt in a saucepan, then stir in the flour.
- Cook the dough for 2 minutes, cool it for 5 minutes, then beat in the three eggs one at a time.
- Pipe 16 mounds onto the sheet, brush them with the egg wash, and sprinkle them with cinnamon and sugar.
- Bake for 20 minutes, lower the oven to 350 F, and bake for 15 minutes more; cool the puffs for 10 minutes.
- Whip the cream, honey, powdered sugar, and salt until firm, then fill the cooled puffs.
