- 1 cup unsweetened almond milk
- 1 cup natural cane sugar
- 1/3 cup grapeseed oil
- 1 tbsp apple cider vinegar
- 1 tbsp pure vanilla extract
- 1 1/2 cups unbleached all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking soda
- 3/4 tsp fine sea salt
- 1/2 cup vegan butter
- 1/2 tsp pure vanilla extract
- 2 cups powdered icing sugar
- 2 1/4 tsp unsweetened almond milk (optional)
- 1/4 tsp fine sea salt (optional)

Steps
- Heat the oven to 350 F and line a 12-cup muffin pan.
- Whisk the almond milk, sugar, oil, vinegar, and vanilla in a large bowl.
- Stir in the flour, cocoa powder, baking soda, and salt until just combined.
- Divide the batter among the liners and bake for 18 to 20 minutes, until the centers spring back.
- Beat the vegan butter, vanilla, powdered sugar, almond milk, and salt until smooth while the cupcakes cool completely.
- Pipe or spread the frosting over the cupcakes and add the sprinkles.
