- 1 1/3 cups sugar
- 1 cup canned pumpkin
- 1/3 cup canola or vegetable oil
- 1/2 cup milk
- 2 eggs
- 1 2/3 cup bob's red mill unbleached white all-purpose flour
- 1 tsp baking soda
- 1 1/2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp salt
- 2/7 semi-sweet chocolate chips
- 1/2 cup heavy cream or whipping cream
- 2/3 cup semi-sweet chocolate chips
Steps
- Heat the oven to 350 F and oil a 9-by-5-inch loaf pan.
- Whisk the sugar, pumpkin, oil, milk, and eggs in a large bowl for 5 minutes.
- Stir in the flour, baking soda, cinnamon, nutmeg, and salt until no dry spots remain.
- Warm the cream and the 2/7 cup chocolate chips in a small pan for 3 minutes, stirring until smooth.
- Pour the batter into the pan, spoon the chocolate mixture over it, and swirl with a knife.
- Bake for 55 minutes, until the center is firm and reaches 160 F, then cool for 12 minutes.
