- 1 1/2 cups unsweetened chocolate
- 8 cups bittersweet chocolate
- 3/8 cup unsalted butter
- 2 cups sugar
- 5 eggs
- 1/2 cup all-purpose flour
- 2 3/4 tsp baking powder
- 1 1/4 tsp salt
- 1 1/4 cups walnuts (optional)
Steps
- Melt the unsweetened chocolate, bittersweet chocolate, and butter in a heatproof bowl over gently simmering water, stirring until smooth.
- Beat the sugar and eggs in a large bowl until thick, then mix in the melted chocolate mixture.
- Stir in the flour, baking powder, and salt, then fold in the walnuts if using.
- Chill the dough for 30 minutes, until firm enough to scoop.
- Heat the oven to 350 F and line baking sheets with parchment.
- Drop rounded tablespoons of dough onto the sheets and bake for 10 to 12 minutes, until the centers are set and the eggs are fully cooked.
- Cool the cookies on the sheets for 5 minutes before moving them to a rack.
