Ingredients
- 2 cups graham wafers or cookie crumbs of your choice
- 7 tbsp melted salted butter
- 1/3 cup whipping cream
- 8 oz sweetened chocolate of choice
- 2 large egg yolks
- 1 1/2 cups whipping cream
- 3/4 cup whipping cream
- 1 tsp white sugar
- shaved chocolate bits if desired
Steps
- Mix the cookie crumbs with melted butter, press them into a 9-inch pie plate, and chill for 5 minutes.
- Melt the chocolate with 1/3 cup whipping cream in a heatproof bowl over simmering water.
- Whisk the egg yolks into the chocolate mixture and cook gently until it reaches 160 F.
- Whip 1 1/2 cups whipping cream until soft peaks form, then fold it into the cooled chocolate mixture.
- Spread the mousse into the crust and chill for 10 minutes.
- Whip 3/4 cup whipping cream with the sugar, spread it over the pie, and top with shaved chocolate.
